THE RAVEN'S BREW STORY

 

 

Long ago, far away, in a seascape of countless islands shrouded in mist and robed in dense forests, Raven’s Brew Coffee came into being. This place was the legendary Alexander Archipelago, also known as Southeast Alaska. The exact locale was the small and isolated town of Ketchikan, the rainiest inhabited place in North America.

  • If there was anything to match the quantity of rain there, it was the number of trees, fish, ravens and the unfathomable, unquenchable craving of the local human denizens for rich and strong, hot, steaming, soul-warming coffee. Nothing excited their senses more than a proper cup of coffee and that coffee was ®. Its perfect balance engendered social harmony. Its freshness and purity matched the intense beauty of the natural setting. Its heat was the satisfying antidote to rain-drenched conditions, and it accentuated perfectly the sunny days. No wonder that it was Raven who brought the gift of the ultimate elixir. It had been Raven who, in eons past, brought the gift of the sun to light the sky of the first peoples of that land.
  • Now he brought the brew that lit the soul, and it was so welcomed that it soon spread all over Alaska and throughout the continent and even across the seas. And there you have it, slightly mythologized and zoomorphed, but essentially the story of the Real Alaskan Coffee For Real Alaskans And Their Real Alaskan Friends. It is a story that continues to be driven by a fanatical love of coffee, coffee lore, coffee quality, and rare coffees. We are a company that strives to offer only coffees that will be an enlightening experience for the customer, and fair and just for the small producers of our unique coffees.
  • THE ART OF BLENDING COFFEE

    From its origins, coffee growing has spread around the globe, settling into areas with the right combinations of weather, altitude, and soil quality. Dozens of varieties have been cultivated and a number of processing methods developed. These variables give rise to the wonderful diversity of taste profiles we as roasters must rediscover every crop season. Therein lies the challenge and art of blending coffees.

    To begin to understand the complexity of blending, we must understand the larger picture of roasting and what makes  coffees stand out amongst the multitude of roasters in the world.

  • THE ART OF GREEN COFFEE SELECTION

    ® has worked for years developing relationships with importers all around the United States. Each importing company brings in coffees from all over the world, and offers up what they have determined to be worthy of roasting. From these dozens of importers and hundreds of green coffees, we must sample, scrutinize, and select the coffees that most appeal to our unique taste preferences.

  • THE ART OF ROASTING

    Once these remarkable green coffees have made it to our roasting facility, the challenges continue. From the many varieties of roasting equipment available within the industry, we have selected air roasting as our method of choice. Air roasting draws in vast amounts of hot air from underneath the coffee. The hot air surrounds each bean evenly, yielding an even transfer of thermal energy, reducing the risk of scorching the delicate green beans. Once the air has passed over the coffee it exits the roaster, never to return. This means that all the dust, chaff, and smoke being released from the beans is instantly removed, creating a noticeably cleaner, less bitter and more vibrant taste in the cup.
